No need for rain to break out 'umbrella'

Iced tea and lemonade are the drinks of summer.

But the dog days of Arizona can make one thirst for a little creativity. After all, who doesn't enjoy a frozen or on-the-rocks fruit concoction? Or a frosty glass that comes with an umbrella?

Though snacking on chilled fruit may take the edge off a hot day, the cool-down experience may be more fun when the fruit is blended into a sweet, yet healthful beverage. Usually all one needs is a blender, ice, fresh fruit, a tall glass and - oh yeah - a little umbrella.



Fruit Smoothie (Dairy)

  • 1 14-ounce can sweetened condensed milk (not evaporated)
  • 1 8-ounce carton plain yogurt
  • 1 small banana, cut up
  • 1 cup fresh or frozen whole strawberries
  • 1 8-ounce can crushed pine- apple (with juice), chilled
  • 2 Tbsp. lemon juice
  • 1 cup ice cubes
  • Halved fresh strawberries (optional)
Chill sweetened condensed milk. In a blender, combine sweetened condensed milk, yogurt, banana, strawberries, pineapple with its juice and lemon juice. Blend until smooth. With the blender running, gradually add ice cubes, blending until smooth. Garnish with halved strawberries. Serve immediately.

Cinnamon Smoothie (Pareve)

  • 1 banana
  • 1 cup fresh or frozen raspberries
  • 1 cup fresh or frozen blueberries
  • Orange or carrot juice
  • 1/4 tsp. vanilla extract
  • Cinnamon to taste
  • 1 Tbsp. rice or maple syrup
  • 3 ice cubes
Put all ingredients in blender except orange or carrot juice.

Blend well, then add enough juice until desired consistency is reached.

Ice Creamy Almond Shake (Pareve)

  • 1/3 cup blanched, slivered almonds, chilled
  • 1/3 cup cold water
  • 2 large or 3 small bananas, frozen
  • 1 sweet orange, peeled and sectioned
  • 2 ripe fresh peaches, peeled and cut up
  • 3 dates
Place cold water and almonds in blender and blend well, stopping once to scrape nut pieces from sides of blender.

Add orange sections, blend, then add peaches and continue blending.

Break bananas into chunks and add to blender.

Add dates.

Continue blending until smooth.

Passion Mash (Pareve)

  • 32 ounces passion fruit juice
  • 1/2 pint fresh strawberries, cut up
  • 1/2 pint fresh blueberries
  • 1 small banana, cut up
Combine all ingredients in a blender and blend until frothy. Serve in tall glasses.

Peach Twist (Alcoholic, optional)

  • 2 cups chopped fresh or canned peaches
  • 2 cups orange juice
  • 2 cups vodka or dry gin
  • 1/3 cup lime juice
  • 1/3-2/3 cups sugar
  • 1-2 cups ice crushed or cubes
Place peaches, orange juice, vodka (if preferred), lime juice and sugar in blender and blend until smooth. Add ice. Blend until well combined. Serve immediately.
